Essential Culinary Techniques: Braising

Braising is a technique starting with dry heat and finishing with moist heat usually reserved for tougher cuts of meat that need time to tender. This method is started on top of the stove and/or finished in the oven. In this class, we will braise a variety of shanks and short ribs as well as fruits for a cold weather dessert.
