This class will introduce the basic wine making steps, winery equipment operations, and basic winery cleaning and sanitation. We will cover yeast selection, fermentation and how to measure pH, total acidity and sugar levels of the fruit and juice. This is the first in our seven part series on Wine Making and Winery Facility Management. Textbook required.
