Students will learn about malolactic fermentations and how to track their progress. With the primary fermentations complete, students will also learn how to measure alcohol levels in wine. We will also discuss the use of sulfur in wine making, how it protects the wine and how it is measured. This is the third in our seven-part series on Wine Making and Winery Facility Management. Textbook required.
