Racking, filtering and aging will be the focus during this phase of wine making. Students will learn to operate the plate and frame filter. We will explore the making of various specialty wines including sparkling, fortified and fruit based wines. The use of tannin additions and oak barrel aging also will be discussed. We will be running all the wines through coarse and medium filtrations to improve clarity and taste. This is the fifth in our seven-part series on Wine Making and Winery Facility Management.
