Students build on the Food Preparation course by preparing and evaluating quantity food recipes in his or her long-term care setting. Food production systems appropriate for the long-term care setting are reviewed, with emphasis on quality control and quantity preparation techniques. This course includes travel to two additional foodservice sites within the vicinity of the students employment, chosen by the student, and preferably in the long-term care setting. Prerequisite: Food Preparation (CHLT-1045).
