This 90-hour online food service program is geared to food service supervisors. Completion of the 90 Hour Food Service program and two years' experience in the field, enables one to be eligible to sit for the Certified Dietary Managers State Exam. Iowa facilities are now required to have Certified Dietary Managers, new hires have until November of 2017 to have their CDM. In order to complete the coursework, the student MUST have access to or be employed within a foodservice operation which includes access to resident/client clinical information, foodservice invoices, employee performance standards, policies, procedures and job descriptions, an institutional kitchen, food service employees, ingredients required to prepare recipes in institutional quantity, camera to photograph completed recipes. Classes include: Food Management, Safety and Sanitation, Food Preparation, Modified Diets, Meal Service and 24 Hour Food Production.
